This week we celebrated Read Across America in Antonio’s school. When the teacher asked for volunteers to contribute for an activity around the Green Eggs and Ham by Dr. Seuss, my mind went straight into spinach. I know it sounds a little crazy but I thought it would be a good opportunity to bring some veggies into the classroom, specially since I already did something similar at Santiago’s school.
So, I gathered my kitchen equipment, green ingredients and headed into the classroom. To my surprise, most of the kids loved the eggs and were very engaged during the short demonstration. Some came for seconds. So, if you want to brighten your breakfast this weekend, here goes an easy and veggie loaded recipe that will hopefully bring some smiles and laughs to the table.
- 6 eggs
- 1 small shallot
- 1 handful of spinach
- fresh parsley
- Avocado oil
- Combine the eggs, spinach and parsley in the blender. Mix well.
- Small dice the shallot.
- In a non-stick skillet, heat the oil. Add shallots and cook until they start to brown.
- Immediately add the green egg mixture, stir slowly until you reach the desired consistency.
- Serve with your favorite ham
